· Eight separated eggs

· Two tablespoons cold strong coffee
· One tablespoon vanilla extract
Filling:
· Three by fourth cup heavy whipping cream
· One by fourth cup Swerve or equivalent granulated sweetener
· 4 oz. cream softened cheese
· One pinch salt
· Half teaspoon vanilla extract
How to prepare Keto chocolate roll cake?
· Preheat the oven to 350 degrees FaHrenheit and cover a 10*15 inch cookie sheet with the parchment paper. You can spray the parchment paper with cooking spray and brush it with the little cocoa powder.
· You can whip the egg whites with the electric mixer until the formation of stiff peaks in a large bowl.
· You can also beat together the egg yolks, sweetener, salt, coffee, vanilla extract and 2 tablespoons of cocoa powder.
· Now, you need to fold the egg whites into the cake batter.
· You have to pour the batter onto the cookie sheet and spread it out to fill the whole surface. You can bake it for about 20 minutes.
· Now, remove it from the oven and carefully cut around the edge of the cake. Now, cool for around 10 minutes.
· Get a clean tea towel and sprinkle one by fourth cup cocoa powder onto the surface of the towel.
· Invert the cake on to the towel covered with cocoa and peel off the top layer of parchment paper. Now, you can roll up carefully inside the towel and make it cool while you make the filling.
· In a large bowl, you can beat the whipping cream with an electric mixer until the formation of stiff peaks.
· Take another large bowl, beat together the cream cheese, sweetener, salt, and vanilla until it gets smooth.
· With the help of a spatula, fold it in the whipped cream onto the cream cheese mixture.
· After cooling the cake for at least 20 minutes, you can unroll the cooled cake from the towel and spread on the filling and back up the roll cake.
